What it is
Citron is the fruit of Citrus medica, one of the old cultivated citrus types. Its fruit is notable for a thick aromatic rind and comparatively limited juicy pulp.

Citron versus lemon
Citron can overlap with lemon, but usually feels more rind-driven, dry and pithy. Lemon more readily suggests sharp juice and familiar fresh acidity.
